Global signatures is a menu where you can add, edit and/or delete global signatures.
The global signatures are used when SiT is sending mails to users, contacts etc.
If you only have one global signature set, this will be attached to the end of all mails going out of the system, if you put more signatures, one of these will be chosen at random.
The global signature is a typical system signature eg describing a thanks for using your company or a regular non disclosure message.
